Trying to get more greens in your life? This recipe is great with kale, spinach, swiss chard or any combination.
2-3 bunches of kale, spinach or swiss chard (I use one of each)
Vela Farms Strawberry Balsamic Serrano Jam
1 onion (any type is fine, I prefer yellow onion).
Wash "greens" in cold water. If using kale, pull out the stem and the vein that runs down the middle of the leaf. It's very woody and does not cook well. If using spinach or swiss chard, leave stems, just cut off the ends.
Chop greens and onion. Add 1 tablespoon olive oil.
In a skillet with a lid, add onions, oil and kale. Cook with lid, stirring often to prevent sticking until kale is tender. This usually takes about 10-15 minutes on medium heat. You want to maintain as much of the moisture as possible in the skillet.
Add other greens (spinach and/or swiss chard).
Cook just long enough for the greens to wilt.
Add 1 tablespoon of Vela Farms Strawberry Balsamic Serrano Jam.
Mix well. Cover with lid and let sit for 5-10 minutes.
Salt & pepper to taste. Serve.
Note: Kale needs to be chopped smaller than the other greens. Kale needs more cooking time than swiss chard or spinach.
This will seem like alot of greens when you are washing them. If necessary, put one type in the skillet at a time until it is wilted enough to add more.
If you have left over, add to your favorite potato soup!
