This recipe is credited to my dear friend Cara.
1 lb wash, cleaned, deveined raw shrimp
1 small onion (optional), chopped fine
1-2 cups broccoli florets
Add 1 cup water to skillet. Heat on high cooking broccoli until tender (add water if needed).
Once broccoli is tender drain water.
Reduce heat to medium, add shrimp and cook for 2-3 minutes, stir continually to prevent burning.
After all shrimp have turned to a light pink color, add 2 tablespoons Vela Farms Ginger Habanero Jelly, increase heat to high for 1-2 minutes, just until jelly starts to caramelize.
Take off burner immediately, do not overcook or shrimp will become rubbery.
Serve over rice. Enjoy!
